Quick and really fun to make and cook

easy cook pancakes

Ingredients
Plain Flour110g
Milk200ml
Water75ml
Eggs2
Butter or cooking oil

So quick and easy and really good fun to make. No weighing scales are needed for this simple pancake batter recipe. Try your hand at tossing the pancake, thatís always a laugh. Donít worry if the first pancake of the batch sticks to the pan (mine always does), the rest will be fine as the pan gets coated.
. . . You can use a range of sweet and savory toppings and fillings depending on what you have in the cupboard and fridge.

This recipe should serve one adult and three hungry kids to have about two to three pancakes each, depending on the size of your pan and the thickness of your pancakes.

How to make it

Fill a standard sized mug about three quarters full of plain flour. Put flour into bowl, add two eggs (medium to large) & a pinch of salt. Mix up the eggs and flour with a hand whisk or spoon until you have a gloopy paste.
. . . Fill a standard sized mug about three quarters full of milk. Leaving the milk in the mug, top up mug with water until itís brim full. Add the water-milk to the bowl a bit at a time all the while mixing to make sure the mix stays smooth. Once you have made this batter it will keep in the fridge for a day or so, so you can make it before your kids come, if you like to be prepared.
. . . Melt a small knob of butter in a frying pan and then pour a dribble of pancake batter in to the hot pan (or use a ladle), tipping the pan from side to side to make a thin layer of pancake batter over the pan bottom. This type of pancake do should not be thick.
. . . Cook for a couple of minutes and then if youíre brave enough, have a go at tossing the pancake. Serve hot from the pan to the plate and let the kids eat them as you cook them.

Cooking with your kids is an important thing to do. It gives them a real sense of achievement and satisfaction, while teaching them some very useful life skills; measuring, estimating, following instructions to achieve a result, dealing with some limited forms of danger (i.e. the hot stove or oven), and gives them confidence and the knowledge that they can prepare food, which is, after all, one of lifeís basic requirements.
